Happy Memorial Day, everyone!
I hope you guys are having a lovely 3-day weekend! 3-day weekends are my favorite! Since summertime is coming closer and closer, I have a great summertime recipe that is easy and healthy! Honey Lime Grilled chicken! Doesn’t that sound soooo good? These are PERFECT for summer BBQs and parties. Grilling chicken is one of the easiest ways to cook for a party. And no one wants to slave away over a hot BBQ during summer right?! These babies will be cooked in no time and I guarantee that everyone will love them!
Having that nice char to the chicken adds so much more flavor than just baking or cooking them in a skillet. When you take that first bite of any type of meat that’s been grilled and you taste the smokiness from the char, it just reminds you of summer. Plus, with the added sweetness from the honey and the acid from the lime, it gives the chicken that perfect balance of flavors. These grilled chicken strips were so juicy and tender, just the way they should be! This is actually my first grilling recipe I’ve made LOL. I usually just let my dad do the grilling but I have finally gotten the courage to use the grill myself (it only took 29 years)!

- 1 lb chicken, cut into strips
- 3 tbsp honey
- 3 tbsp lime juice
- 1 tsp paprika
- 1 tbsp fresh cilantro
- Salt & pepper to taste
- Season the chicken with salt, pepper and paprika
- In a small bowl, add honey and lime juice and mix together.
- Pour over the chicken strips and transfer to heated grill.
- Grill the chicken until cooked all the way through.
- Top with fresh cilantro.
